Recipe!

One of my favorite websites is http://thepioneerwomancooks.com where she posts recipes step by step. I love cooking and cookbooks and her blog is great! Here is a recipe my mom used to make when I was growing up. It is easy and very flavorful. This was one of the first recipes I made as a newlywed, and Trip still requests it so it's in our keeper file! Enjoy....

Ingredients:

  • 1 bell pepper
  • 1 onion
  • 1 bag of frozen cut okra
  • Package of kielbasa sausage (or any smoked sausage)
  • Can of black beans
  • Package of yellow rice
  • Salsa

Kroger has a great cilantro salsa we love!


1. Chop bell pepper and onion


2. Slice sausage and cook until slightly charred on the outside. (Don't worry if it has black grill marks-- that's what you want!)



3. Saute pepper, onion, and thawed okra together until they have reduced and browned.

4. Micowave black beans and season with cilantro, garlic, salt, and pepper.

5. Cook yellow rice according to directions.

6. That's it! We like to put yellow rice first on our plate, then black beans, sausage, and veggie mixture. Add salsa to taste!
